Start the weekend with an energising Hatha Yoga lesson in the dome. All abilities welcome. Book for the whole course (6 sessions) or book a drop-in sessions.

21st April – 8am-1pm – Hedgerow & Forest Foraging – LEARN.COOK.DINE
5 hours @ £50.00
Join us for our second foraging session of the year – You’ll learn how to identify the plants, best picking practices and local spots to find these free foods. Then it’s into the kitchen back at Brighton Cookery School to turn these wonderful ingredients into tasty and nutritious dishes.
Please note the foraging spot is approx 20 minutes walk from the Cookery School and so you need to feel confident to cover this distance or arrange alternative transport.
Join us on the third** Sunday of the month for our Afternoon Tea, with menu provided by Award Winning Patisserie Master GBBO The Professionals finalist 2021 pâtissier Julien Plumart.

Julien’s café in Brighton has been selling high-quality macarons, pastries, cakes, tarts, chocolates, sandwiches and traditional French confectionery for over 12 years, and is much-loved by locals and tourists alike.

2 hours 30 minutes @ £65.00
Join us to create authentic tacos from scratch, you’ll be making two types during your time with us – Tacos al Pastor and Tacos de Camaron – as well as your own pink pickled onions and classic guacamole – then sit back and relax in our dining area and enjoy the fruits of your labour!
The Rockwater Chess Club meets every second week in our Lodge where our boards will be set up and ready for you♟️ Play friendly matches, get advice from our facilitator Andrew, or learn the basics from Andrew who’s on hand to help throughout the evening.
*This event is free of charge.
About our facilitator
Andrew Wallace has been teaching chess as a curriculum subject in Brighton and Hove schools for 10 years. He runs school chess clubs and tournaments and has worked with Age UK to bring the benefits of chess to older people. He is the regional organiser for the charity Chess in Schools and Communities.

Enjoy a one off 7-course tasting menu created by our Guest Chef Ricki Weston & Steven Edwards.
Born and raised in Storrington, West Sussex, Ricki’s career kicked off in 2010 at Whites Kitchen in nearby Steyning as Commis Chef, progressing to Demi Chef de Partie. He then moved to Wabi, a contemporary Japanese restaurant in Horsham, as Chef de Partie (2011-12). Staying in Horsham, Ricki joined the South Lodge Hotel’s brasserie, The Camellia, as Chef de Partie, with Steven Edwards at the helm (2012-14), before moving to the hotel’s Michelin-starred restaurant Matt Gillan at The Pass as Chef de Partie (2014-15).
In November 2015, Ricki was appointed Chef de Partie, then Junior Sous Chef, at Michelin two-starred Restaurant Sat Bains in Nottingham where he spent three years, before joining Whatley Manor as Sous Chef in August 2018. Shortly after joining the team, Ricki took part in the 2019 Roux Scholarship where he was one of 18 young chefs who reached the regional finals of the competition.
In February 2022 after only a few weeks in his role as Executive Chef Ricki gained one Michelin Star for The Dining Room, an impressive attainment at the start of his journey, Whatley also retained their Green Michelin star, an award given in recognition of Sustainable Gastronomy.
As this is a one off event please note we will not be able to cater for dietary requirments.

We’ll cook together from scratch a 3-course classic Italian feast before you sit down and dine with a glass of wine in our laid back setting.

Gnocchi with porcini mushrooms in a creamy white wine sauce
Braised cross-cut lamb shank in a rich pomodoro sauce served with seasonal greens and a runny parmesan polenta
Join us for a cosy evening in the Lodge with 12twelvestudio as you learn to create your very own bouquet just in time for Spring. Vanessa Freeman will guide you throughout this interactive workshop and you’ll be able to take home your beautiful creations.

On Thursday 10th April, we’re hosting a Supper Club on the Roof Terrace for Open Water subscribers with passionate Somerset based entrepreneur, Paul Hayes.
Owner of the brand VIVIR Tequila which launched in 2019, Paul will be talking you through why he started VIVIR Tequila, how it is produced in Jalisco, Mexico and the journey it takes from the distillery to the South Coast of England.
Our chefs have produced a bespoke 3-course menu, incorporating a selection of VIVIR Tequila and each course will be accompanied by a specially curated drink where you will have a chance to sample the best of what the brand has to offer so that you can truly be immersed in the exciting world of tequila.

THE BRAVO Awards
The BRAVO awards are an annual highlight in the Brighton foodie calendar, allowing the general public to cast their votes for their favourite food and drink venues across 16 categories. The 2023 edition of the awards was celebrated with great acclaim. Representatives from many of Brighton’s restaurants gathered to honour the winners at Cavanserai, a venue associated with Brighton Fringe.
