You’ll make three types of bread during your time with us, perfect to recreate at home!

The Rockwater Chess Club meets every second week in our Lodge where our boards will be set up and ready for you♟️ Play friendly matches, get advice from our facilitator Andrew, or learn the basics from Andrew who’s on hand to help throughout the evening.

About our facilitator
Andrew Wallace has been teaching chess as a curriculum subject in Brighton and Hove schools for 10 years. He runs school chess clubs and tournaments and has worked with Age UK to bring the benefits of chess to older people. He is the regional organiser for the charity Chess in Schools and Communities.

Pasta Perfection will see you create pasta dough from scratch, not as simple as it sounds, we’ll be having no cracked pasta here! You’ll transform your dough into beautiful pasta then we’ll package it up and send you on your way with new skills and fresh pasta for your next days’ lunch or dinner. Includes 1 long pasta and 1 stuffed pasta.

Yes, we admit there is no better way to learn Spanish cooking than from a Spaniard chef. With Chef Victor from Madrid, learn the tricks and secrets of traditional Spanish Tapas, before you sit down and dine with a glass of wine in our relaxed setting.

25 June | Tommy Heaney Guest Chef
Enjoy a one off 7-course tasting menu created by our Guest Chef Tommy Heaney & Steven Edwards.
Tommy Heaney is Head Chef and owner of Heaneys Cardiff, his eponymous restaurant that opened in 2018. Born in a small town just outside of Belfast called Crumlin.
Travelling throughout the US cooking in kitchens instead of enrolling in catering college, meant that Tommy gained invaluable, hands-on knowledge, that put him in good stead for the rest of his culinary career. Returning to the UK at the age of 18, Tommy landed a job with Chef Tony Hughes, who taught Tommy a repertoire of classic culinary techniques, adding to his already vast amount of self-study. Feeling confident about his cooking, Tommy was set for his next adventure which took him to Australia where he worked in award-winning restaurants and to Thailand where he discovered even more dishes and totally new flavours. Craving to put all of his passion into practice, Tommy headed to London and began working with Richard Corrigan until he realised that despite the vibrant restaurant scene, he couldn’t afford to live in London.
Coinciding with the start of a new family, Tommy moved out of London and soon found himself running Restaurant Tommy Heaney at The Great House in Bridgend. It was here that Tommy was able to combine his learnings and influence from the people that he had worked with to create his own signature style. Simple, pared-back, contemporary and technically accomplished with a focus on minimal waste of the ingredients he uses, Restaurant Tommy Heaney was where Tommy developed his creative flair. Four years at The Great House, Tommy took full advantage of his creative freedom, developed his own menu and bettered his cooking via various self-initiated stages in London’s leading kitchens including Dabbous and Le Champignon Sauvage. Rave reviews followed and an invitation to appear on BBC’s Great British Menu (2018) confirmed Tommy’s reputation as one of the UK’s most exciting culinary talents.
As this is a one off event please note we will not be able to cater for dietary requirements.
Please note we take a non-refundable £20 deposit per person for all reservations to guard against no-shows and short notice cancellations. This will be taken off your final bill in the restaurant.
26th June, 6-9pm – Macaron Masterclass
3 hours @ £60.00
Most historians are inclined to believe that the macaron originated in Italy, probably Venice, and was transported to France by sailors where it was further refined by French pâtissier techniques. The consensus is that the word “macaron” comes from the Italian word ammaccare which means to crush.

THE BRAVO Awards
The BRAVO awards are an annual highlight in the Brighton foodie calendar, allowing the general public to cast their votes for their favourite food and drink venues across 16 categories. The 2023 edition of the awards was celebrated with great acclaim. Representatives from many of Brighton’s restaurants gathered to honour the winners at Cavanserai, a venue associated with Brighton Fringe.
