Drifter will be a new concept for Brighton, based on the Tokyo jazz kissa bar or listening bar. laid back, relaxed + calm.
We will be offering a range of natural wines, bespoke cocktails and craft beer, complimenting our fresh seafood menu cooked in a wood burning oven.

This Role Includes
Responsibilities:
– Create a safe, welcoming and pleasant working environment for all staff
– Manage all staff training and development
– Working with management team to create a truly individual experience for our customers and partners
– Oversee the daily operations of the Kitchen, including opening and closing procedures, rota’s, health and safety compliance, COSHH, menu costings, Staff GP,
– Manage and train all kitchen staff, ensuring adherence to company policies
– Ability to create and update food menus, ensuring a diverse selection of dishes to meet customer preferences
– Deliver fast changing menus according to seasonal changes
– Monitor stock levels and place orders for supplies as needed
– Maintain cleanliness and organisation of the all areas, including equipment and storage areas
– Collaborate with general manager and assistant manager to coordinate food and drink service and menu delivery
Skills Required
Experience:
Drifter will be as much a place for music lovers as well as food and drink, experience or passion for music is essential.
– Previous experience in a similar role (at least 2 yrs), fresh small plates, preferably with cooking with fire, wood stove or hearth
– Strong knowledge of fish preparation, pastry, and all other aspects of ingredient lead kitchen
– up to date with all food safety regulations and procedures
– Ability to multitask and prioritise tasks in a fast-paced environment
– Excellent communication and interpersonal skills
– Proven leadership abilities with the ability to motivate and manage a team
