{"id":10591,"date":"2023-03-30T04:34:07","date_gmt":"2023-03-30T03:34:07","guid":{"rendered":"https:\/\/restaurantsbrighton.co.uk\/jobs\/?p=10591"},"modified":"2023-05-31T13:24:29","modified_gmt":"2023-05-31T12:24:29","slug":"nicky-hedley-owner-of-brighton-regency-routemaster","status":"publish","type":"post","link":"https:\/\/restaurantsbrighton.co.uk\/jobs\/blog\/nicky-hedley-owner-of-brighton-regency-routemaster\/","title":{"rendered":"Nicky Hedley &#8211; Owner of Brighton Regency Routemaster"},"content":{"rendered":"<p><strong>Name<\/strong> Nicky Hedley<\/p>\n<p><strong>Occupation<\/strong> Owner of Brighton <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton-regency-routemaster\/\">Regency Routemaster<\/a><\/p>\n<p>Nicky and the Regency Routemaster have recently won the <a href=\"https:\/\/brightonrestaurantawards.co.uk\/\">BRAVO Award<\/a> for b<a href=\"https:\/\/restaurantsbrighton.co.uk\/bravo-afternoon-tea\/\">est afternoon tea in Brighton<\/a>.<\/p>\n<h3>Please can you share a whistle-stop tour of your career?<\/h3>\n<p>Following a degree in Law I worked in Event Management for 12 years in London and <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton\/\">Brighton<\/a> before being made redundant, working as a <a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/\">waitress<\/a> for a year and then taking over the Brighton Regency Routemaster : )<\/p>\n<h3>Describe your job in three words:<\/h3>\n<p>Exhausting, Exciting and Happy<\/p>\n<h3>What has been your philosophy that has seen the successful development of your career?<\/h3>\n<p>I always have an idea of where I want to go, or what I want to do next, and adapt my plans to take opportunities that present themselves with both hands!<\/p>\n<h3>How and when did you train in hospitality, was there a particular reason for this career path?<\/h3>\n<p>I didn\u2019t have any formal training in <a href=\"https:\/\/restaurantsbrighton.co.uk\/women-in-hospitality\/\">hospitality<\/a> but I started my first job as a KP and then waitress when I was 14\u2026.for \u00a32.50 per hour! Hospitality roles saw me through school and university. After this when I was working in Event Management I hadn\u2019t really planned to come back to the industry but when covid changed my career path and the opportunity to take over BRR came up I discovered how much I still enjoyed it!<\/p>\n<h3>Favourite aspect of the job?<\/h3>\n<p>Meeting and talking to customers and getting to provide people with happy experiences and memories<\/p>\n<h3>What excites you most about your role?<\/h3>\n<p>The variety of opportunities available and paths I could take the business down. The future is exciting!<\/p>\n<h3>The toughest aspect of your job?<\/h3>\n<p>Bouncing back after receiving a negative review. It\u2019s hard to accept that this will happen from time to time and not to take it too much to heart.<\/p>\n<h3>Is there a moment in your career that stands out above the rest?<\/h3>\n<p>Putting together a \u00a32.5M event in Dubai for 1000 people in just under 2 months. It was the most intense period of working I\u2019ve ever had but I realised I could trust my instincts and actually excel under pressure.<\/p>\n<h3>What Nicky Hedley most proud of?<\/h3>\n<p>Having the courage to take a chance on running my own company despite not knowing how it will turn out \u2013 risky but hopefully rewarding!<\/p>\n<h3>What has been your biggest challenge?<\/h3>\n<p>Having so many roles to play in the company and finding time to do everything \u2013 as a small business I do everything from the actual serving, marketing and sales, finance to all aspects of operations. It definitely takes some getting used to.<\/p>\n<h3>Do you have a go to or failsafe plate of comfort food?<\/h3>\n<p>Ramen!
