To run such a high standard of business for as long as he has, even through these current times is outstanding.<\/p><\/blockquote>\n<p>But also Alex Jacquemin from a chef point of view. We\u2019ve also recently had our function room renovated, so can\u2019t wait to hold some really special <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton-events\/\">events<\/a> in customers enjoying ?<\/h2>\n<p>I think as a pub, the staples are always enjoyed the <a href=\"https:\/\/restaurantsbrighton.co.uk\/best-burgers-restaurants-brighton-hove\/\">burgers<\/a>, <a href=\"https:\/\/restaurantsbrighton.co.uk\/best-fish-and-chips-brighton\/\">fish and chips<\/a>, <a href=\"https:\/\/restaurantsbrighton.co.uk\/best-steak-restaurant-brighton\/\">steaks<\/a> etc but the one that\u2019s surprised me most is how much people enjoy our whipped tofu starter it\u2019s one of our best selling dishes at the moment.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" an aspiring chef?<\/h2>\n<p>Take your time in the early stages of your career finding a <a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/chef-jobs-brighton-hove\/\">chef<\/a> who has time to nurture you, and don\u2019t be afraid to write to as many of the top places in the country and ask to do work experience or a stage.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone moments in my career have been doing this at places like The Latymer, The Ritz and Heckfield Place.<\/p>\n<h2>What has been your biggest challenge?<\/h2>\n<p>I would say trying to hit and maintain a good food cost currently the prices of produce are obscene so we have to be clever with wastage and how we utilise everything to make it viable.<\/p>\n<h2>How do you ensure that your dishes reflect the local flavours and ingredients of Sussex?<\/h2>\n<p>We use local ingredients from all local suppliers some as local as the herbs from the garden and the meat from <a href=\"https:\/\/www.calcotfarmproduce.co.uk\/\" target=\"_blank\" rel=\"noopener\">Calcot Farm<\/a> in Ashurst, we are also just opening an account with chefs farms to utilise the best of what\u2019s chefs across the country, I&#8217;m also partial to a cookbook my favourite being \u201ccooking in pubs\u201d by Simon Bonwick, a fantastic chef.<\/p>\n<h2>Your go-to knife, which brand is it and why do you love it?<\/h2>\n<p><a href=\"https:\/\/www.yaxell-knives.com\/\" target=\"_blank\" rel=\"noopener\">Yaxell<\/a> I would say not because they\u2019re the best ever but they\u2019re low maintenance and have lasted me 10 years yet they\u2019re still going and sharp.<\/p>\n<h2>How do you relax?<\/h2>\n<p>Watch a good series or just socialising with whatever precious time we have to that\u2019s more of a treat my usual go to places are <a href=\"https:\/\/restaurantsbrighton.co.uk\/plateau-brighton\/\">Plateau<\/a> or <a
