Andy has worked at some incredible <a href=\"https:\/\/restaurantsbrighton.co.uk\/\">restaurants in Brighton<\/a> and beyond, and we were lucky enough to hear how his journey began. Inspired by his two uncles\u2014both chefs on his father\u2019s side\u2014Andy followed in their footsteps, starting with a three-year apprenticeship at Gleneagles. Hotel Paddocks House Newmarket<\/p><\/div>\n<blockquote><p>My grandmother was a fantastic cook who I spent many hours making jam and cakes with as a child during the holidays.<\/p><\/blockquote>\n<h2>Give us a whistle stop tour of your career in hospitality?<\/h2>\n<p>I started working in a small hotel in the town I grew up in, in Devon when I was 13, after this I moved to Birmingham to go to catering college for 2 years.<\/p>\n<p>I was then lucky enough to get my first proper job at Gleneagles. I was here for 4 years, I then moved to London to work with Anton Mosimann at the Belfry in Belgravia. support local, ethical and sustainable suppliers, tell us about this and can you give examples?<\/h2>\n<p>I have worked with Trenchmore Farm for many years and love what they have done, the animal husbandry is second to none and this shows in the meat they supply, also <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton-newhaven-fish-sales\/\">BNFS<\/a> and MCB supply some of the best local fish in the country &#8211; it\u2019s super fresh and right on our doorstep.<\/p>\n<p>Munnieries have been working with small farms in Sussex and Kent for years now and have the best local vegetables and fruit.<\/p>\n<p>Orchard Farm has the most amazing eggs.<\/p>\n<p><a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/blog\/beals-farm-charcuterie\/\">Beals farm<\/a> has some of the best do you look for in new team members?<\/h2>\n<p>Reliability and work ethic.<\/p>\n<h2>Favourite style of cuisine?<\/h2>\n<p>Classical French, I love spending time in France and love the standard of everyday foods.<\/p>\n<h2>What makes you happy?<\/h2>\n<p>Spending time with my family and helping out at Seaford Rugby club.<\/p>\n<h2>What do you do to relax?<\/h2>\n<p>Play (badly) and coach Rugby, href=\"https:\/\/restaurantsbrighton.co.uk\/etch-brighton\/\">Etch<\/a> is amazing, <a href=\"https:\/\/restaurantsbrighton.co.uk\/little-fish-market-brighton\/\">Little Fish Market<\/a> also.<\/p>\n<p>And you can&#8217;t beat the <a href=\"https:\/\/restaurantsbrighton.co.uk\/salt-room-brighton\/\">Saltroom<\/a> or <a href=\"https:\/\/restaurantsbrighton.co.uk\/coal-shed-brighton\/\">Coal Shed<\/a> <em>(pictured)<\/em> for amazing steaks and fish, one of the <a
