This session built on the foundations already laid in previous workshops, with a dual purpose: to update participants on progress and to focus the discussion on waste \u2013 the everyday, behind-the-scenes challenge faced by hospitality venues across the city.<\/span><\/p>\n<h3><b>Project Updates<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">We shared recent milestones, including:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><a href=\"https:\/\/restaurantsbrighton.co.uk\/sustainable-restaurants-brighton\/\"><b>49 venues<\/b><\/a><span style=\"font-weight: 400;\"> have now completed the <a href=\"https:\/\/restaurantsbrighton.co.uk\/sustainability-toolkit\/sustainability-checklist-for-restaurants-cafes-and-pubs-of-all-sizes\/\">Sustainability Checklist<\/a><\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><a href=\"https:\/\/bhfood.org.uk\/resources\/food-strategy\/\"><span style=\"font-weight: 400;\">The checklist has been included in the city&#8217;s official <\/span><b>Food Strategy<\/b><\/a><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">A <\/span><b>University of Brighton research paper<\/b><span style=\"font-weight: 400;\"> has been published, applying the MOA (Motivation, Opportunity, Ability) framework to the development of the toolkit<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Initial steps have been taken to explore <\/span><b>climate-friendly meal guidelines<\/b><span style=\"font-weight: 400;\"> with Brighton &amp; Hove Food Partnership and the Council<\/span><\/li>\n<\/ul>\n<p>This project is taking root and keeping it moving forward will require continued collaboration, fresh ideas and wider visibility.<\/p>\n<h3><b>Workshop Focus: Waste in Hospitality<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Led by Ty Lawrence-Lamarca from Recorra, the session focused on waste: how to avoid it, reuse it, recycle it and, when all else fails, dispose of it responsibly. Ty\u2019s presentation prompted lively and thoughtful discussion, with participants raising important questions around:<\/span><\/p>\n<ul>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Reducing stigma or awkwardness for diners asking for doggy bags<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">How portion sizes are perceived and balanced across menus<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Managing kitchen workflows when orders are adjusted<\/span><\/li>\n<li style=\"font-weight: 400;\" aria-level=\"1\"><span style=\"font-weight: 400;\">Helping staff handle waste correctly<\/span><\/li>\n<\/ul>\n<p><span style=\"font-weight: 400;\">We also learned (to the surprise of many!) that \u201cemptying pockets\u201d \u2013 where diners discard wrappers, tissues, or other items onto their plates \u2013 is an actual issue, making it harder for restaurant staff to separate waste effectively.<\/span><\/p>\n<p><span style=\"font-weight: 400;\"><a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/07\/RB-Sustainable-Waste-Management-Workshop-1-compressed.pdf\">You can download Ty\u2019s slides here<\/a>.<\/span><\/p>\n<h3><b>Communicating with customers<\/b><\/h3>\n<p><span style=\"font-weight: 400;\">Alongside the waste conversation, we revisited a topic that keeps coming up: communication.
