Behind it is <strong data-start=\"387\" data-end=\"402\">Poul Jensen<\/strong>, a chef whose career has taken him from luxury hotels in London to 5-star sailing ships in Tahiti, and even the kitchens of the iconic River Caf\u00e9. Since taking over Roedean Caf\u00e9 in 2015 with his partner Sammy, Poul has transformed the much-loved spot into a destination for hearty, homemade food served with unbeatable views. In this interview, he shares his journey through hospitality, the charm of Brighton life, and what makes Roedean and <a href=\"https:\/\/restaurantsbrighton.co.uk\/macs-cafe\/\">Mac\u2019s Caf\u00e9<\/a> enduring local favourites.<\/p>\n<p data-start=\"255\" data-end=\"885\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2025\/06\/Ellen-Richardson-Restaurants-Brighton-Roedean-Cafe-14.jpg?tr=w-2000,h-1333\" alt=\"Roedean Cafe on Brighton seafront, with flowers and umbrellas outside\" width=\"2000\" height=\"1333\" \/><\/p>\n<h3>Where did your hospitality journey begin?<\/h3>\n<p>Denmark\u2026 I went on my first holiday without my parents to visit my cousins in Denmark. One night we were making a Beef Stroganoff and realised we didn\u2019t have any double cream to finish off the sauce\u2026 So instead, we used a product called Ymer. (Ymer is a Danish milk product that was developed in the 1930s. It\u2019s similar to yogurt and buttermilk and it\u2019s often served as a breakfast, snack or dessert.) The sauce turned out creamier, richer and so much nicer.<\/p>\n<h3>Before taking over Roedean Caf\u00e9, what were the key roles and experiences that shaped your approach to hospitality?<\/h3>\n<p>Early in my career I worked in big hotels in central London and then went off to Tahiti for a year working on a 5* luxury sailing ship, Windsong, that carried 150 passengers.<\/p>\n<p><img decoding=\"async\" class=\"alignnone wp-image-17863 size-full\" src=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/09\/Poul-Jensen-long-hair-in-London-Roedean-Cafe-owner-.jpg\" alt=\"Poul Jensen, long hair in London - Roedean Cafe owner\" width=\"1216\" height=\"927\" srcset=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/09\/Poul-Jensen-long-hair-in-London-Roedean-Cafe-owner-.jpg 1216w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/09\/Poul-Jensen-long-hair-in-London-Roedean-Cafe-owner--300x229.jpg 300w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/09\/Poul-Jensen-long-hair-in-London-Roedean-Cafe-owner--1024x781.jpg 1024w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2025\/09\/Poul-Jensen-long-hair-in-London-Roedean-Cafe-owner--768x585.jpg 768w\" sizes=\"(max-width: 1216px) 100vw, 1216px\" \/><br \/>\nOn my return I worked at the River Caf\u00e9 in London. Their style of cooking started my love of Italian food and steered me to the venues I would work in.<\/p>\n<ul>\n<li><a href=\"https:\/\/daphnes-restaurant.co.uk\/about-us\/\">Daphnes<\/a> \u2013 Head Chef, South Kensington, London. Very famous and popular restaurant for A-listers.<\/li>\n<li>Belgo \u2013 Head Chef, London. Where we sold 10 tonnes of mussels a week.<\/li>\n<\/ul>\n<ul>\n<li>Moved to Brighton in 1996 and took over the St James Tavern where we served River Caf\u00e9 food at pub prices. We also launched <a href=\"https:\/\/www.theargus.co.uk\/news\/17279880.tuaca-became-brightons-favourite-liqueur\/\">Tuaca<\/a> from the St James Tavern, with many memorable evenings enjoyed (forgotten)\u2026<\/li>\n<li>Jamie\u2019s Italian \u2013 Head Chef, Brighton. I was also part of the openings team and opened four.<\/li>\n<li>Browns \u2013 Head Chef, Brighton. I was also District Head Chef looking after eight other Browns sites.<\/li>\n<\/ul>\n<h3>How did the opportunity to take over Roedean Caf\u00e9 come about in 2015?<\/h3>\n<p>Sammy had a small beauty salon in Rottingdean. Talking to a client one day she mentioned that I was fed up working for other people and would love to find a <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton-coffee-shops\/\">Brighton caf\u00e9<\/a>. Her client had only just the day before had a conversation with the owner of Roedean Caf\u00e9, who had mentioned that he was thinking of selling.<\/p>\n<p>We soon met with him and it took six months of meetings and chats for him to finally decide that we would be the right people to take Roedean Caf\u00e9 forwards.<\/p>\n<p><img decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2025\/06\/Ellen-Richardson-Restaurants-Brighton-Roedean-Cafe-35.jpg?tr=w-2000,h-1333\" alt=\"diners enjoying breakfast outside at Roedean Cafe. 4 diners. 1 dog, sitting on picnic benches with sea views at the rear. \" width=\"2000\" height=\"1333\" \/><\/p>\n<h3>What was it about Roedean Caf\u00e9 that convinced you it was the right venue for you?<\/h3>\n<p>We used to go there for our hangover breakfasts and I used to use the golf course with my mates for a round and a couple of cheeky beers, and could always see its potential.<\/p>\n<blockquote><p>It was a place we thought we could only dream of owning\u2026<\/p><\/blockquote>\n<h3>Who are your business partners at Roedean Caf\u00e9, and how do you work together to run the business?<\/h3>\n<p>Sammy and I run the business together. We have been in catering all our lives.<br \/>\nSammy is the vision and design.<br \/>\nI run the business day to day and jump in the kitchen as and when I\u2019m needed.<br \/>\nIt is a partnership that works very well and we have a great team that support us.<\/p>\n<h3>How do you balance preserving Roedean Caf\u00e9\u2019s art deco charm with keeping it fresh and relevant for today\u2019s customers?<\/h3>\n<blockquote><p>When we first got there, we stripped it back to its original charm\u2026 exposing the 80-year-old oak floor.<\/p><\/blockquote>\n<p>We kept the original banquets, sanding them back and revealing the many colours from over the years.<br \/>\nWhen we modernised the ladies, for instance, we retained the old-style cisterns and tiles whilst giving it a fresher look.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2025\/06\/Ellen-Richardson-Restaurants-Brighton-Roedean-Cafe-63.jpg?tr=w-2000,h-1333\" alt=\"overhead shot of breakfasts at Roedean cafe. Poul Jensen interview \" width=\"2000\" height=\"1333\" \/><\/p>\n<h3>How would you describe the concept and ethos of Roedean Caf\u00e9?<\/h3>\n<p>It\u2019s all about freshly cooked, homemade quality food and good portions at reasonable prices with an outstanding view, great outdoor space and free parking which can be enjoyed all year round.<\/p>\n<h3>What drives your menu choices at Roedean Caf\u00e9, and how do you keep regular customers coming back?<\/h3>\n<p>Roedean Caf\u00e9 is an old transport caf\u00e9. We have tried to keep it simple although the menu is big.<\/p>\n<blockquote><p>We have just recently had the biggest menu change so far, including more home-cooked dishes and added some classics like our new Club Sandwich.<\/p><\/blockquote>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2025\/06\/Ellen-Richardson-Restaurants-Brighton-Roedean-Cafe-61.jpg?tr=w-2000,h-1333\" alt=\"table loaded with breakfasts at Roedean cafe. Club sandwiches, hot dogs, full english breakfast, burger, hot chocolate \" width=\"2000\" height=\"1333\" \/><\/p>\n<h3>How important is the sea-view location and cliff-top setting to the overall experience you offer?<\/h3>\n<p>We think the sea-view location is a massive selling point.<\/p>\n<blockquote><p>It doesn\u2019t matter the weather \u2014 it\u2019s stunning either way.<\/p><\/blockquote>\n<h3>Which awards or accolades mean the most to you, and why?<\/h3>\n<p>We won Caf\u00e9 of the Year a few times with The Argus which really helped us in the early days, but the real reward is retaining our original customer base whilst attracting new customers.<\/p>\n<h3>How would you describe the concept at Mac\u2019s Caf\u00e9 in Kemp Town, and how does it differ from Roedean Caf\u00e9?<\/h3>\n<p>Mac\u2019s is another Brighton legend that has been going for over 70 years.<\/p>\n<blockquote><p>It has always been known as a proper builder\u2019s caf\u00e9, although a greasy spoon without the grease.<\/p><\/blockquote>\n<p>They are very similar food-wise where ingredients are concerned, although Roedean has a more varied menu including classics like Caesar Salad, Club Sandwiches and smoked salmon.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2025\/06\/HaKkrYYg-scaled.jpeg?tr=w-2560,h-1920\" alt=\"Macs Cafe in Kemptown, owned by Poul Jensen and partner Sammy\" width=\"2560\" height=\"1920\" \/><\/p>\n<h3>What do you love most about living and working in Brighton?<\/h3>\n<p>The sea and the people.<\/p>\n<h3>Where does Poul Jensen like to eat in Brighton?<\/h3>\n<p>There are so many fantastic venues, we are slowly getting round to trying them all.<br \/>\nBut if I had to \u2014 we do like a cheeky chowder at <a href=\"https:\/\/restaurantsbrighton.co.uk\/riddle-finns\/\">Riddle &amp; Finns<\/a> for lunch, and Isaac was a fav for dinner.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"https:\/\/img.restaurantsbrighton.co.uk\/wp-content\/uploads\/2014\/08\/Riddle-and-Finns-Meeting-House-Lane.jpg?tr=w-600,h-376\" alt=\"the exterior of Riddle and Finns champagne and oyster bar in Meeting House Lane in Brighton \" width=\"600\" height=\"376\" \/><\/p>\n<h3>How has Instagram and social media helped you connect with customers and promote your caf\u00e9s?<\/h3>\n<p>Our brother-in-law does the <a href=\"https:\/\/www.instagram.com\/roedeancafeandgolf\/\">Roedean Cafe social media<\/a> and it\u2019s a great way of informing our customers of what we are up to, particularly with the car events.<\/p>\n<h3>What\u2019s next for Roedean Caf\u00e9 and Mac\u2019s Caf\u00e9 in terms of future plans or developments?<\/h3>\n<p>Both <a href=\"https:\/\/restaurantsbrighton.co.uk\/brighton-coffee-shops\/\">Brighton caf\u00e9s<\/a> take a lot of looking after as they are old buildings near the sea.
