On one of our late evenings and after a busy shopping day out, we added an old grandfather chair to the area. We then sat down to enjoy a Cognac and an Old Fashioned; the curtains were drawn and the atmosphere was just perfect; at this point,\u00a0we knew that a new brand was born. He was a great <a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/chef-jobs-brighton-hove\/\">chef<\/a> at a Michelin star restaurant in France.<\/p>\n<h2>How and where did you train in hospitality?<\/h2>\n<p>I knew I wanted to work in <a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/\">restaurants<\/a> and be involved with food, wine and people from an early age, going to catering school was so natural for me. I have never looked back or had second thoughts.<\/p>\n<p>I went to catering school in France in Noirmoutier, after completing my studies I went to work at Michelin star restaurant, <a href=\"https:\/\/www.chateau-locguenole.com\/en\/\">Chateau de Locguenole in Lorient<\/a> and at Hotel Castel Marie Louise in La Baule, before deciding to go to London where I joined an opening team for new restaurant of Michel Rostang.<\/p>\n<p>The next step which was crucial for my career was meeting <a href=\"https:\/\/en.wikipedia.org\/wiki\/Gerard_Basset\">Gerard Basset<\/a> (MS, MW, OBE) who became my mentor for over the next 20 years and who gave me a bug for wine and <a href=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/bar-jobs-brighton\/\">bar<\/a>.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-4058 size-full\" src=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1.jpeg\" alt=\"Steve Pineau LDV\" width=\"1920\" height=\"1279\" srcset=\"https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1.jpeg 1920w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1-300x200.jpeg 300w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1-768x511.jpeg 768w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1-1024x682.jpeg 1024w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1-1280x852.jpeg 1280w, https:\/\/restaurantsbrighton.co.uk\/jobs\/wp-content\/uploads\/2019\/08\/Latellier-Du-Vin-1-1600x1066.jpeg 1600w\" sizes=\"(max-width: 1920px) 100vw, 1920px\" \/><\/p>\n<h2>Which colleague or mentor has been the biggest influence?<\/h2>\n<p>Gerard Basset (MS, MW, OBE).<\/p>\n<h2>What motivates you?<\/h2>\n<p>A new challenge is what motivates me.<\/p>\n<p>I believe that anything can be achieved if you really want it and you are prepared to give it one-hundred-and-ten per cent.
