ZERO WASTE Eggs from MACS FARM

  • We are supporting a local business.
  • It is really nearby so there is very little travel.
  • The shells go into food recycling.
  • We return the cardboard for reuse.
  • We use 2000 eggs a week in 16 different dishes.
  • And we get great eggs from it!
As your brand progresses then you can make changes in your menu to better suit those items that you can get or that are more sustainable not just based around local product but we have written some of our menu so we can use less kit in the kitchen.” – Jo
 

Delivery

Macs Farm are in Ditchling so fairly local and I go an pick them up every week. I take back all the empty cardboard and collect the eggs.  We could get them from someone else who delivers but they might not be as local and might not be as good.

It is all of our duty as part of this journey with sustainability to look at our suppliers and think can we reduce the amount of them, is there someone more local or if that product can’t come completely locally, is there someone that is already delivering over the road, down the road or is in town on those days already so that it’s not coming just for you.” – Jo
