Case study: educating staff, ouef café Hove

Our Sustainability Change: create a staff welcome pack showcasing local suppliers

When we help staff understand and get excited about our values we also get our customers excited.

It’s really important that everyone gets the same information from the start and that employees feel like they are being invested in” – Amber Sterck, owner of Oeuf Café

Welcome pack

The welcome pack is a beautifully designed and simple pdf that:

  • Welcomes staff.
  • Gives staff important information about dress code and rotas.
  • Introduces the story of Oeuf.
  • Introduces the suppliers as community partners.
  • Explains further sustainable practices at Oeuf.

Telling The story of Oeuf

Oeuf Café is a long-held dream of Ambers. Her vision is built on her experience of hospitality management and her dining experiences in exceptional venues. Sustainability is at the very foundation of her vision and of Oeuf itself.

I’ve worked in some great places, and the ones that I have loved have been invested in their sustainability.” – Amber

Community partners

Amber has selected her suppliers very carefully as they are a crucial partner for her vision for Oeuf. Calling them Community Partners emphasises the importance of that relationship.

Bold choices

Opening Ouef in October 2020 was a bold choice. Other bold choices are choosing not to serve Salmon due to farming practices and choosing instead to serve eggs Troyal using sustainably farmed ChalkStream® Trout.

one more thing Oeuf does to be sustainable

“We recycle all of our food waste using anaerobic digesters. Biffa generates renewable bio-methane from the food and green waste we produce. Anaerobic digestion technology generates biogas used to power our sites and any surplus is diverted to the national grid.”

Oeuf’s community partners

  • The Good Egg Fellas
  • Pelicano Coffee
  • ChalkStream® Trout
  • The Flour Pot Bakery
  • Court Garden sparkling wine
