About Us:
Fika Bakery is a fast-growing wholesale and retail bakery, inspired by Swedish and Scandinavian pastries and breads.

We have established ourselves at the premium wholesaler of sweet pastries in Brighton & Hove, and we are now growing in several areas which requires an experienced head baker to help navigate us to our next level of success.

In 2026, we are:
– Opening a bakery cafe
– Expanding our breads range
– Scaling our buns nationally
– Increasing our savoury range and pastry section

We are a small, skilled team of passionate foodies, producing a line of hand-made, high quality, unique products in Sussex.

This Role Includes

We’d like to meet with you if you:

– Are an existing Head Baker or a talented Deputy/Senior baker ready to lead a team
– Would like to work in a small business experience rapid growth
– Want to bring your skills and creativity to a business with a unique proposition
– Want to feel valued and be part of our management team to build the future of the business

What we are offering:

  • 40 hours per week, working 5 days per week
  • Early morning starts preferred (5-6am to be agreed) with early finishing

Skills Required

  • A positive approach to team leadership
  • Creative ideas for breads and pastries
  • Experience in baking wonderful breads, enriched doughs or Viennoiserie
  • An excellent awareness of Health & Safety procedures, allergens and hygiene
  • Attention to detail and pride in production
  • Confidence to lead a small team and lead improvements in all aspects of production
  • Adaptability
  • Stock management
  • A good level of spoken English

About Fika Bakery Ltd

Fika Bakery is Brighton & Hove's newest wholesale and retail bakery, creating artisan Swedish baked goods. We supply cafes across the city and to a number of villages in Sussex with traditional cinnamon buns, cardamon buns and vanilla buns.

The business has seen a period of rapid growth as Swedish 'Fika' (translation: coffee and cake with friends) grows in popularity as well as a love for sticky Scandinavian buns. Fika Bakery is now expanding its range to provide a lunch menu of speciality rolls, prepared quiches and filled flatbreads, as well as a bread range to include traditional rye, cereal and sourdough loaves.

Fika Bakery was founded by Jenny Engvall, who has 30 years’ bakery experience. She started working in some of the best bakeries in Stockholm, before moving to London to create afternoon teas at The Ritz. "The UK is falling in love with all things Scandinavian right now, and our customers are reporting an incredible passion for cinnamon buns and cardamon buns. We’ve had to grow rapidly to keep up with demand."
