Overview
A stunning grade II Listed 15th-century building in the medieval village of Alfriston, near the Seven Sisters and in the South Downs National Park, close to the historic town of Lewes and both Glyndebourne Opera House and Charleston. Following a year-long refurbishment (open June 2021), it will provide 30 bedrooms, an inn with all-day casual dining, a more formal restaurant and will also cater to events and weddings.

General Purpose and Scope
As Supervisor, you will be responsible for assisting the Dining Room Manager and Inn Manager (management) in providing leadership, development and direction for the entire Dining Room & Inn departments following The Star’s standards. Likewise ensuring the highest standards of service, cleanliness, presentation and guest relations, whilst achieving department objectives and financial requirements.

Primary Duties
· To assist management in planning and directing service preparation and activities to the highest professional quality for all services provided at the Dining Room, Room Service and Event space. Including all items produced for; The Dining Room (60 covers), The Inn & Library (approx. 70), Room Service (30 Rooms) & Banqueting (One event space with a capacity: dining 80 & reception 100)
· To assist management in obtaining and overseeing the day to day Dining Room, Event and Inn operations, in an effective and efficient manner
· To assist management in managing and monitoring the requisition and purchase of all service, wine and liquor products and other necessary supplies. Confirming the sourcing strategies are of the highest professional quality, seasonality and locally sourced where possible
· To assist management in leading the development and monitoring of the service and labour budgets for the department, departmental training, hygiene standards, and an excellent service culture
· To assist management in assigning and monitoring team members’ tasks for departmental team members, confirming the department is clean, hygienic, attractive, and orderly to the highest standards
