Invitation to participate: Supporting the University of Brighton’s Food Waste Research

As part of the Sustainability Toolkit work we have been doing with the University of Brighton, we are delighted to invite you to participate in a University study into food waste.

We are looking for restaurants, cafes, pubs, or bars to participate in this study, helping the University gather real-world data while receiving professional support for your own kitchens. As long as you serve food on four consecutive days a week, you are eligible to take part.

Supporting Local Research, Improving Your Bottom Line

By participating in this University-led study, your venue acts as a live case study. In exchange for your contribution to the research, you will receive:

  • A Tailored Audit: Professional food waste measurement conducted by the University team.

  • Bespoke Insights: A report and recommendations based specifically on your venue’s data.

  • Expert Guidance: Practical insights to help reduce waste-related costs.

  • Workshop Access: A free food waste workshop to share findings and best practices.

The anonymised data gathered from your kitchen will feed into a wider study, with the final outcomes and general advice shared publicly to support the entire hospitality sector. Your participation will only be made public if you would like to be part of a public case study later in the project.

How the Study Works

The University team has streamlined the process to ensure it integrates smoothly with your service:

  1. Initial Conversation: To understand your kitchen’s unique context.

  2. Measurement Phase: Waste is measured over four days using newly piloted reporting sheets, designed specifically for speed and ease of use.

  3. Analysis: You’ll receive an analysis of the data and tailored recommendations.

  4. Follow-up: After implementing changes, a final four-day measurement period tracks the progress.

Staff Support: To ensure this research doesn’t place a burden on your team, funding is available to compensate staff for the extra time required to complete the reporting forms.
