Chilli Restaurant – Fresh, Authentic Thai Restaurant in the Heart of The Lanes.

Some people think that too much of a good thing is, well, too much… but not when it comes to the outstanding and authentic Chilli Thai Restaurant! The husband-and-wife dream team who have been running ‘Green’ Chilli in Hove have recently opened their sister restaurant ‘Red’ Chilli in Brighton, and it is everything I never knew I needed. The same exceptional quality Thai food in a refined and elevated space that suits the cosy, tastefully decorated interior perfectly.

Central Brighton is not short on restaurants, and this foodie town is forever looking for something fresh and fabulous. Chilli Brighton is as fresh as they come. Located on Prince Albert Street, right in the heart of The Lanes, you couldn’t get more central if you tried. Steps from the seafront, a quick skip into the alleyways, and a stone’s throw from late-night reverie –  whether you are dining for business, pleasure, or family fun, Chilli has a table for you.

Bring on the Roti!

Roti is originally Indian, but through centuries of culinary globetrotting, it has become an unexpected and much-loved element of Southeast Asian cooking. Chilli’s crisp, light, and doughy roti is designed to dip, scoop, and dunk into rich Thai sauces for a crunchy bite of deliciousness.

Som Tam delicious is goin’ on…

No Thai dinner would be complete without a spicy Som Tam green papaya salad, and Chilli’s is one of the best in town. After living in Thailand for over a year, I often have a hankering for a taste of Southeast Asia, and this is my go-to dish. Thinly sliced threads of green papaya, carrot, and red onion; pops of red chili and fresh tomatoes; tossed in a citrus-umami dressing, and sprinkled with crispy fried scallions and crunchy roasted peanuts. Served atop baby gem leaves, every bite takes me back to Khao Lak! They also offer a vegan option, which is fish sauce-free and just as tasty.

Spiced to perfection

As an omnivore, I have a tendency to lean towards dishes that have fish or meat – which is why I love dining with my vegan foodie friends. Melek has been vegan for over 10 years and is not just a food lover, but a food worshipper! The two of us can wax lyrical about food for hours, bonding over the phrase ‘sexy bread’, and forever sharing our food obsession of the moment.

Tonight, Melek shared her newfound favourite Chilli dish: the Thai Basil Aubergine. Holy Thai Basil, Batman – this is a winner! Impossibly soft and delicate aubergine, cooked low and slow, drizzled with a rich and savoury chilli sauce, and topped with a burst of fresh Thai basil leaves. A vegan Thai flavour bomb that I’m still thinking about weeks later. Delish!

Make mine a Massaman

When it comes to Thai curries, I haven’t met one yet I didn’t absolutely adore. From the bright and popular Green to a smooth and rich Andaman, or a hot and fiery Red — there’s a time and place for each and every one.

Tonight, we chose a warming and salubrious Tofu Massaman, which was filled to the brim with flavour-rich coconut curry sauce, tender bites of grilled tofu, carrots, and potatoes, and topped with a crunchy toast of coconut and cashews. We spooned it generously over aromatic coconut rice and finished every bite with smiles from ear to ear. Fantastic.

Something sweet, perhaps?

Nothing whisks me away to my backpacker days quicker than a serving of sweet sticky rice with fresh mango. To me, this dish is equal parts nostalgia and joy – every bite is a memory of warm nights, happy kids, and effortless Thai culinary genius.

A generous pile of sticky rice, sprinkled with toasted coconut and drizzled with sweet coconut cream, topped with fresh golden mango slices. The epitome of comfort food, found on every Thai table for generations – and quite possibly the reason why Thailand is the Land of Smiles.
