Hyderabadi Murgh masterclass with Indian Summer Brighton
A firm favourite in Brighton for flavour sensation dishes hailing from India is Indian Summer, on East Street. Experience authentic regional food cooked by highly experienced and skilled chefs, who’s menu will transport you across the globe for an evening of culinary excellence. We speak to co-owner Rob and head chef at Indian Summer and explore the cookery secrets behind their most popular dish, the Hyderabadi Murgh.
Dating back to the 17th century, this dish on the menu at Indian Summer has deep roots. Tender chicken is marinated overnight in a spice mix including yoghurt, nutmeg and cinnamon. The sauce is then prepared with red chilli, mint leaves, cashew nuts and then tempered with ghee & shahi jeera. The dish is served with basmati rice, garlic cumin butter roti, mango pineapple chutney & pickle, or as part of a thali.
