This exciting Mediterranean-inspired kitchen is brought to you by the award-winning culinary forces behind Cin Cin, founders David Toscano and chef Jamie Halsall.
With Barbino, the mission is simple: to offer exciting, affordable, high-quality comfort food with a distinct Italian influence and a Mediterranean feel, all within the wonderfully laid-back setting of a classic Brighton pub.

This fusion of fine-dining skill and casual dining ensures professional cooking at an affordable price point. Chef Jamie Halsall has won and held a Bib Gourmand from the Michelin Guide since 2018, so diners can expect excellence without the formality. Barbino makes the most of exceptional Sussex produce, utilising Cin Cin’s established network of local Sussex suppliers to create dishes that are both seasonal and sustainable.

The Friday & Saturday Menu: Pub Snacks & Sando
The Friday and Saturday menu transforms classic pub snacks and comfort food with a vibrant Mediterranean and Italian twist. Expect creative small plates, robust pies, and incredible sandos (gourmet sandwiches) that are generous, affordable, and full of flavour. The kitchen also caters expertly for gluten-free diners.

Dishes are constantly evolving based on what’s fresh from their Sussex suppliers. Hearty sample bites include venison and guanciale sausage rolls, beef and mushroom pie with mash and sautéed spinach, cauliflower mac and cheese, chicken and aubergine parmigiana focaccia, and a pork bombette and nduja kimchi sub. There’s tempura squash brioche with whipped ricotta, Sussex leeks with Gorgonzola and pangrattato, plus indulgent puds like sticky toffee with mascarpone and caramelised bread and butter pudding.

The Sunday Feast: Roasts by Cin Cin
Sunday is dedicated to the traditional British Sunday roast, elevated by Barbino’s award-winning kitchen. Sunday roasts are served from 12:00 PM to 5:00 PM.
Main courses typically feature high-quality meats and creative vegetarian options, examples may include:
- Meat Roasts: Expect premium cuts like Sussex 28 day aged beef rump, or 12 hour crispy pork belly with apple sauce.

- Vegan Roasts: Innovative and hearty vegan roasts are always on offer such as Butternut squash, roast shallot & thyme pie, ensuring inclusive dining.
- Trimmings: All roasts come with the mandatory Yorkshire puddings, crispy roast potatoes, seasonal Sussex vegetables, and plenty of gravy.

Barbino’s residency is perfectly matched by the cool atmosphere of The Windmill, one of Brighton’s classic back-street boozers established in 1828.

The Windmill is a relaxed, laid-back British pub with cosy dining and drinking downstairs and a comfy dining room upstairs for larger groups. Crucially, the pub boasts a south-facing sun trap covered terrace out front, allowing you to enjoy alfresco vibes even on cooler days. It features an inviting open fire in winter and a traditional toad table.

The drinks menu is as celebrated as the food: The Windmill proudly supports local producers with an impressive array of local Sussex beers from breweries like Unbarred, ABYSS, Cloak & Dagger, Beak, and Burning Sky.
They also make the audacious claim of pouring the best pint of Guinness in Brighton—a challenge worth accepting!
For events, The Windmill features a first-floor private function room, suitable for functions with 25-35 capacity, complete with a DJ space and food available from Barbino.
