For breakfast or brunch, you’ll find savoury options like sausage rolls, veggie quiches, and filled focaccia, as well as sweet seasonal specials that change with the week.

The bakery’s Kemptown shop is a local hub – a favourite place to stop in for morning coffee and a pastry, or a lunch break filled with fresh focaccia sandwiches, savoury tarts and seasonal soups. Tables fill up quickly, especially on weekends, as regulars and visitors alike drop in to grab a coffee and soak up the friendly atmosphere.

The Queen’s Park shop is a more compact version of the Kemptown bakery but no less welcoming, offering a carefully curated selection of baked goods and drinks with the same Open Bakery Brighton charm.

RB loves the chewy brown loaf, a slow-fermented, deeply flavoured bread with a springy texture and signature crust. It’s become a Brighton staple. Equally famous is their almond croissant – golden, generously filled, and finished with the perfect dusting of icing sugar.

Meet the Open Bakery Team

Brighton Open Bakery is run by a dedicated team of around 40 passionate bakers, chefs and front-of-house staff. At the Kemptown site, you’ll find a team of 8 friendly front-of-house staff led by a shop manager, alongside a talented bread team and patisserie team, each with their own head. A full-time apprentice splits their time between pastry and bread, learning from some of the best in the business.

Just up the road is the Open Bakery Cookery School, also home to the savoury production kitchen and biscuit team. A head chef leads a team of five on the savoury side, while two bakers work their magic downstairs in the biscuit kitchen. A bookings manager keeps the classes running smoothly, while a dedicated driver and market manager support weekend markets and events.
