About our facilitator
Andrew Wallace has been teaching chess as a curriculum subject in Brighton and Hove schools for 10 years. He runs school chess clubs and tournaments and has worked with Age UK to bring the benefits of chess to older people. He is the regional organiser for the charity Chess in Schools and Communities.

16 July | Sally Abé Guest Chef
Enjoy a one off 7-course tasting menu created by our Guest Chef Sally Abé & Steven Edwards.
Sally Abé was born in Nottingham and lived there for most of her life, before moving to Sheffield at the age of 18.
As part of her hospitality and business management degree at Sheffield Hallam University, Sally came to London in 2007 at the age of 20 to undertake a year placement at The Savoy – and then never left! It took only six months for Sally to fall in love with the kitchen and realise her true passion in cooking. Sally remained working in London and then joined Gordon Ramsay at Claridge’s later that year.
Two years later, Sally joined The Ledbury in Notting Hill. This is where Sally spent the next five years, honing her skills and technique under the expert guidance of two-Michelin-starred chef, Brett Graham. It was here that Sally feels she really mastered the art of the cooking and, working across all sections of the kitchen, experiencing how a Michelin-starred restaurant comes together.
In 2016, Sally was appointed Sous Chef at Elystan Street and stayed there as part of the opening team until February 2017, when Brett invited her to take over as Head Chef at The Harwood Arms – which remains to this day London’s only Michelin-starred pub. Sally led the team at The Harwood Arms for over four years, where she not only retained the pub’s Michelin star, but also placed the pub as the number one gastropub in the UK in Estrella Damm’s Top 50 Gastropubs for the very first time.
In July 2021, Sally opened her first restaurant, The Pem, named after suffragette Emily Wilding Davison. The menu at The Pem displays an elevated style of the food that Sally has become renowned for; it’s more refined, more considered, and more sophisticated – yet still retains the fun and liveliness that Sally’s guests have come to know and love. Sally builds on the foundations of historic British cuisine and celebrates flavours and ingredients that are familiar and much-loved but interpreting them in her own way. The Pem was named ‘One to Watch’ at the 2021 National Restaurant Awards and this year, 2023, was included in the Top 100 list at 97.
Sally is also a familiar face on TV, regularly appearing on Saturday Kitchen Live, James Martin’s Saturday Morning, and reaching the banquet on Great British Menu 2022.
Sally’s cooking style is simple, hearty, tasty food, intensely focused on flavour. Sally has a gift for capturing classic, nostalgic British dishes that many will remember fondly from their childhoods, and subtly modernising them. She makes a point of working with long-standing trusted suppliers when it comes to fresh produce, meat, and fish; people who she knows attach the same importance to quality and sustainability as she does, and who support smaller producers and maintain traditional methods.
As this is a one off event please note we will not be able to cater for dietary requirements.

Enjoy a one off 7-course tasting menu created by our Guest Tom Hamblet & Steven Edwards.
Tom who is currently sous chef at South Lodge in Horsham won MasterChef: The Professionals in 2023 and off the back of that win has been doing residencies at both the Camellia restaurant at South Lodge & the Avenue restaurant at Lainston House showcasing his creative, technical cooking that took him all the way in the show.
Tom has honed his skills at a number of renowned Michelin starred restaurants including Pennyhill Park in Surrey and restaurant Interlude under Jean Delport.
Passion for cooking runs in Tom’s family and his dad is a top chef at South Lodge and his mum specialises as a pastry chef.
As this is a one off event please note we will not be able to cater for dietary requirements.

THE BRAVO Awards
The BRAVO awards are an annual highlight in the Brighton foodie calendar, allowing the general public to cast their votes for their favourite food and drink venues across 16 categories. The 2023 edition of the awards was celebrated with great acclaim. Representatives from many of Brighton’s restaurants gathered to honour the winners at Cavanserai, a venue associated with Brighton Fringe.
