Luke, executive chef at the Kemptown Project and Northern Thai BBQ specialists Lucky Khao, did a majority of his chef training in Bangkok itself. Inspired to bring the techniques and flavours he so loved back from Thailand to Brighton, Luke and the team at the Kemptown Project brought us Lucky Khao. A menu showcasing unique dishes keeps Brighton foodies guessing each time, with a firm favorite remaining for diners to enjoy at each visit; the ‘Northerners Hot Dog’.

While training in Bangkok, family meals with the kitchen teams he was working with were a highlight for Luke. A standout was a Chiang Mai style hot dog, which back in Brighton has been recreated using local ingredients while retaining that taste of Thailand Luke loves so much. Enjoy this sensational dish alongside one of their deliciously potent cocktails from Tuesday-Saturday on St James’s Street in Brighton.
